A Quick and Easy Bison Meal: Bison Steak Bites
I've had some extra bison stew meat in the freezer for awhile, leftover from what I used during an old bison photo shoot. I'd been holding onto it, trying to wait for a good time and idea to use it. I'm not a huge fan of stew, so I was looking for another way to use it. The truth is, on my site, NebraskaBison.com, bison stew meat is just pre-cut chunks of the bison roast. It makes it easy to use in things like stew, or even kabobs. Because it comes from the roast, it's a prime cut and is tender and flavorful.
The dish I finally ended up making with this can be easily made with the Bison Stew Meat, or you could also use cut up bison steak or bison roast. As long as they are small (1-2" chunks) of a prime cut, you should be good.
This recipe is very simple and straight forward. The first thing you'll want to do is mix up your seasoning. I used equal parts (1 tsp. each) garlic salt, rosemary and black pepper. I discovered this seasoning combination complements bison well in a bison burger seasoning taste test I did back in August.
Once you mix up the seasonings, sprinkle it over your bison chunks....
and sliced onions.
Then melt some butter in a large skillet or frying pan over medium heat. Remember, with bison we use lower heat than we would with beef. You might even want to go just slightly lower than medium heat.
Add your onions and allow them to begin to cook.
After the onions have cooked for 1-2 minutes, add the chunks of bison meat. Stir the mixture so that the meat does not cook to fast.
You'll cook the bison for approximately 10 minutes, however it will vary depending on the size and thickness of your chunks. The bison should remain tender and be cooked to medium doneness (or less, if you prefer).
I served these Bison Steak bites up with garlic mashed potatoes and fresh green beans.
Bison Steak Bites
Ingredients:
Bison meat cut into chunks, from steak or roast1 small onion, sliced
1 tsp. rosemary
1 tsp. garlic
1 tsp. black pepper
1/4 cup butter
Directions:
Mix together rosemary, garlic and pepper in a small dish. Season bison chunks and onion with the seasoning mixture.Melt butter in a large frying pan over medium heat. Add onion and cook for 1-2 minutes.
Add bison chunks and cook over medium heat for approximately 10 minutes. (Time will vary based on the thickness and size of bison chunks). Cook slowly and not past medium rare doneness. Meat should remain very tender.
